peanut butter fudge

This is the good stuff! I usually make one batch a year at Christmas. Ingredients:

  • 2 sticks of butter
  • 1 lb of peanut butter (get the 18oz. jar and use it all except a heaping tablespoon)
  •  3 Tbs. Milk
  • 1 Tsp. Vanilla
  • 1.5 Lbs of powdered sugar (I use about 23 of a 2Lb. bag)
  • 1 bag of milk chocolate chips

Melt the peanut butter, butter, milk, and vanilla in the microwave (2 minutes is usually sufficient).  Remove from microwave, stir until it’s a nice consistency. Add 1 Lb of the powdered sugar and stir. Slowly add powdered sugar (about 23 cup at a time) until the mixture becomes somewhat stiff. Spread into a 13x9 pyrex pan. Melt the chocolate chips and spread on top of the peanut butter mixture. put in fridge and allow to set.

We usually keep this in the fridge until we are ready to enjoy it.
